Simple. In your rendering options panel, set start and end frames for your animation. In the output files tab, set the filename and location and the output type to animation or AVI (cant remember off the top of my head).

Finally, press F10 to render.

If you want to perform actions in post however, you'll probably get better results in rendering out to an image sequence (uncompressed TIF files is usually a favourite since they're lossless). In this instance, instead of setting an output type of animation, set the stills filename and set a filename mask. In this manner you'll get a numbered sequence of stills that can then be imported into Photoshop/Premiere/After Effects/etc. for post work and subsequent re-rendering to animation.
