Also - how do I make sure that I am in a 1" = 1" grid? The wood moulding profiles I bring in are the important thing that is to be show off and I want them to be the correct size in ratio to real life and the room I build around it.

You could paint the plank seams into your texture map and use planer projection onto your floor polygons. That's how it is usually done. If you actually model the planks the you can use cubic projection or UV mapping.
To set your Unit type in Modeler press D and select the Units tab,.. pick English and Inches for the Default unit. Also,.. you can type feet or inches ( like this 1' 2" ) into the numeric requesters when beveling.
Use the Right and Left [ ] brackets to adjust the grid size in Layout and Press O for Unit System option in Layout.
