That's pretty much what I've done for mine, model all the pieces [or a batch there-of] then assemble.
Can I maybe suggest, UV'ing a single stud now and as you go copying and pasting that to build each new piece, it'll save collecting and UV'ing them all later, just to put the LEGO logo on the top of them.
