My guess is you are trying to pull the top gradient slider and that one doesn't move. Click on the gradient colorbar itself and a new slider.

Where were you doing your textures? Layout or Modeler? If you are working in Modeler hiting 's' should save everything. If you are working in Layout you need to use one of the 'Save Object' options.

It will save all the objects including new surfacing. Use the regular save to save your scene information.

Ummm make sure that Viper is running while you are rendering the image. IF that doesn't work then after the render is done go to 'Surface Editor' and it should render it out in Viper. It's a weird bug but that always happens to me.
Hope everything works out.

Yes to the background. I don't know what is going on with your other problem unless you are saving all objects in Layout then going back to modeler and it is reverting back to old settings. It can be goofy like that sometimes. Try adjusting the surfaces in layout and then going back over to modeler and saving there. There will be an * next to the object name if it has been changed since last saving so it can clue you in to whether modeler is seeing the changes made in layout.
