I know this is probably very basic but when i use the pen tool and come to turn a corner the last point just moves to the new location abd I can't get it to produce a nice bend. What am i doing wrong?

that happens when you click too close to the last point.
just click a little farther away, hold down the left mouse button and drag the new point into place

of course you could, only it would result in a spline not an n-sided polygon... and while you can freeze a spline to turn it into a polygon, it would have many more vertices than the polygon generated with the pen tool
try both and see the difference

You can kill the spline with k then select the points and turn it into a polygon with p but that would be pointless when you should use the Pen tool in the first place Right
